Hi! I’m Caroline Schiff, but you might know me as @PastrySchiff, and maybe you know my work- my whimsical baked Alaskas, floral adorned layer cakes, buttery shortbreads, chewy bagels, and crusty loaves of sourdough. I’ve been in the business for over a decade, working my way through numerous restaurants and bakeries, including becoming the opening Executive Pastry Chef at the acclaimed Gage & Tollner, in my hometown, NYC. Along the way, I authored a cookbook, “The Sweet Side of Sourdough”, became a James Beard Outstanding Pastry Chef Award Finalist 2022, and was named a Food + Wine Best New Chef 2022. These days I’m in and out of the kitchen, creating, writing, consulting, and popping up all over. What's next? I'm bringing my very own diner to life here in NYC because I love nothing more than a grilled cheese sandwich with a half sour pickle, followed up with a slice of coconut layer cake.
